Tortilla Bean Dip
1 Tbsp. Salad Oil
16-oz. can Refried Beans
1/2 small Onion, diced
Salt/Pepper to taste
2/3 cup Salsa(use store bought salsa)
1 cup crushed Tortilla Chips(or nachos)
2/3 cup Jack Cheese
In a sauce pan, heat oil and cook refried beans (mix in small amount of water). Heat to a bubbly boil, reduce heat. Add onions, seasonings and salsa. Mix in well. Add 1 cup crushed tortilla chips or nachos. Place dip in a casserole dish and top with jack cheese. Bake at 400F until cheese melts.
