Stuffed Tomatoes

2 Tbsp. Butter
2 Tbsp. minced Onion
3 Tbsp. diced Green Pepper
4-oz. can diced Green Chiles
2 cups cooked, diced Chicken
1 cup soft Bread Crumbs
1/2 tsp. Salt
1/8 tsp. Pepper
1/4 tsp. Paprika
6 large, firm Tomatoes

In a saucepan, melt butter and saute onion, green pepper and chiles. When onion and green pepper are tender, add chicken. Mix well, then add bread crumbs and seasonings. Blend thoroughly and cover, simmer 10 minutes.
Wash and hollow tomatoes. Take chicken mixture and fill tomatoes. Heat oven to 375 F. Grease a baking dish and place stuffed tomatoes. bake for 25 to 30 minutes. Sevrve with rice! (Serves 6)
