Mexican Meat Loaf
11/2 lbs. Ground Beef
1 well-beaten Egg
1 cup dry Bread Crumbs
16-oz. can Stewed Tomatoes
4-oz. can Green Chiles
2 Tbsp. finely-diced Onion
11/4 tsp. Salt
1/4 tsp. Garlic Salt
1/4 tsp. Oregano
1/8 tsp. Paprika
Parsley Flakes
In a large bowl, mix meat and egg, add bread crumbs. Mix tomatoes, green chiles, onion and add to meat mixture. Blend in seasonings and combine throughly. Make into a loaf and put in a lightly-greased loaf pan, 9x5x3. bake at 375 F for one hour. Garnish with parsley flakes. (Serves 6)
