Spanish Rice
1 Tbsp Olive Oil
2 cups cooked white Rice
Large pinch of Saffron
Salt to taste
Dash of Cayenne Pepper
Dash Paprika
1/4 cup diced Green Pepper
1/4 cup diced Pimiento
1/2 cup Chicken Stock (or beef stock)
In a skillet, heat olive oil and saute onion. Add rice and stir fry for 1 to 2 minutes. Add saffron, salt, pepper and paprika. Blend in green pepper and pimiento. Add meat stock and 1/2 cup of water and cook, covered, until green pepper is tender.
