Caldo de Queso (Cheese Soup)
3 Tbsp. Oil
3 Tbsp. Flour
1/8 sm. Onion, diced
6 cups Water
1 tsp. Salt
3 dashes of Pepper
1/4 tsp. Garlic Powder
3 Chiles diced
1 cup Longhorn Cheese, grated
3 med.-sized Potatoes, diced
In a 2-quart cooking pot, add oil and heat. Brown flour, then add diced onions. Cook for a few minutes. Add 6 cups of water to this mixture. Stir constantly. Let boil and simmer for 10 minutes. add salt, pepper, garlic powder and diced chiles. Set aside covered. Add 1 cup of cheese to the pot. Then add diced potatoes and return to medium heat. Cook until potatoes are tender. Cheese must be completely melted. Sprinkle with pepper and serve.
