Cheese Crisp
4 Corn Tortillas
Oil for cooking tortillas
¾ cup of grated Longhorn cheese
diced, cooked Green Chiles
diced Onion (optional)
In a skillet, heat 3 to 4 tablespoons oil and place one corn tortilla in the hot oil. Add grated cheese evenly over the tortilla, then add green chiles and onion if desired. Place another corn tortilla over cheese and chiles and cover for a few minutes. Then, turn to cook other side. Cook until cheese melts completely and tortillas turn a light golden brown. Repeat with last two tortillas.
